Gelatin mix is a favorite convenience pantry
staple in our house. We use it to make quick desserts, including parfaits, trifles, and fruit salads.
Whip gelatin mix in sugar cookie dough, frosting, and icing for extra flavor and
color. Make frosted grapes, meringue cookies, fruit-flavored roll-ups, and
marshmallows with it, too!

Yield: 1 pound makes (22) 1/2 cup servings of prepared yellow lemon gelatin dessert.
Directions to make (4) 1/2 cup servings: Dissolve 1/3 gelatin mix in 1 cup boiling water. Stir in 1 cup ice water. Chill until set.
Ingredients: sugar, gelatin, fumaric acid, sodium citrate, potassium sorbate,
salt, natural flavor, yellow 5, yellow 5 lake, dimethylpolysiloxane.

Recipe: Lemon Drop Party Gelatin Shots
Alcohol imbibed cups of yellow fruity flavored gelatin. Easy to serve at a party and
packs a punch!
1 pound lemon
2 1/3 cups
boiling water OR fruit juice
2 1/3 cups well-chilled liquor (see Notes, below)
~ In a large bowl or pitcher, stir together gelatin mix and boiling water until
gelatin has dissolved.
~ Stir in chilled liquor.
~ Pour mixture into 2 oz.
plastic cups or wax-lined paper bathroom cups (Dixie cups).
~ Place cups on a
baking pan for easy transport.
~ Chill until set, about 1 hour.
Notes: Chill bottle in the freezer for 1
hour before preparing shots. Traditionally, vodka is used for jello shots, as it has the most
neutral flavor. However, we prefer to use one of the
99 Schnapps varieties (99
Apples, 99 Bananas, 99 Blackberries, 99 Cherries, 99 Coconut, 99 Grapes, 99
Oranges, 99 Peaches, 99 Watermelon ); these boast a high proof
and lots of flavor.

Cool and tangy dessert can be whipped up fast!
8 oz block cream cheese (low-fat okay)
1/2 cup powdered sugar
3 Tbls. lemon
juice of 1/2 a lemon OR 1 tsp.
12 oz. tub whipped cream topping, thawed, divided
9" prepared pie crust (see Notes, below)
~ In a mixing bowl, beat
together cream cheese, powdered sugar, gelatin mix, and lemon juice/juice
~ Gently fold in approx. 2/3 of the whipped cream topping.
~ Fold the mixture into the pie crust and chill for at least 1 hour.
~ Spread remaining whipped cream topping over the pie before serving.
Notes: I like to use a graham cracker pie crust or a shortbread cookie crust,
but any ready-to-use pie crust will work.
