Recipe: Pina Colada Gelatin Shots
Alcohol imbibed cups of pineapple and coconut flavored gelatin. Easy to serve at a party and
packs a punch!
1 pound pineapple-flavored gelatin mix
5 1/3 cups
boiling water OR fruit juice
5 1/3 cups (1.25 L) well-chilled coconut rum (see Notes, below)
~ In a large bowl or pitcher, stir together gelatin mix and boiling water until
gelatin has dissolved.
~ Stir in chilled rum.
~ Pour mixture into 2 oz.
plastic cups or wax-lined paper bathroom cups (Dixie cups).
~ Place cups on a
baking pan for easy transport.
~ Chill until set, about 1 hour.
Notes: Chill bottle in the freezer for 1 hour before preparing shots. Traditionally, pina colada jello shots would need the flavor of coconut rum, but you can make them with any liquor. We prefer to use one of the 99 Schnapps varieties (99 Bananas, 99 Blackberries, 99 Apples, 99 Oranges, or 99 Cherries); these boast a high proof and lots of flavor.
