Our whole dried oyster mushrooms have a mild mushroom
flavor and firm texture. They have a sea shell type shape and a pale yellow
creamy color. Add oyster mushrooms to cream sauces, chowders and soups, Asian
dishes, au gratin potatoes, and casseroles. We like to marinade them in garlic,
olive oil, and herbs and then grill or broil them. Dried mushrooms have been a popular cooking staple
throughout Europe and Asia for many centuries, but only recently so in the
United States. They are very economical, as a smaller amount of dehydrated
mushrooms is needed in recipes versus their fresh counterpart, since the flavor
is highly concentrated. They are shelf-stable, lightweight, and take up little
space in your pantry.
