Our dried and sliced shiitake (shee-tah-kay) mushroom caps
are dark brown on top, with tan gills underneath. They have a meaty flesh and a
full bodied, woody flavor and are sometimes referred to as Chinese black
mushrooms or forest mushrooms. Add shiitakes to stir frys, rice dishes, Asian
soups, and vegetable dishes. Dried mushrooms have been a popular cooking staple
throughout Europe and Asia for many centuries, but only recently so in the
United States. They are very economical, as a smaller amount of dehydrated
mushrooms is needed in recipes versus their fresh counterpart, since the flavor
is highly concentrated. They are shelf-stable, lightweight, and take up little
space in your pantry.

Cold Water Rehydration Directions (preferred for best flavor): Place dried
mushrooms in a bowl. Cover with cold water. Allow to rest for at least 2 hours,
until soft and pliable.
Hot Water Rehydration Directions (fastest method): Place dried mushrooms in
a bowl. Cover with boiling water. Allow to rest for 30 minutes, or until soft
