Recipe: Pina Colada Gelatin Shots
Alcohol imbibed cups of pineapple and coconut flavored gelatin. Easy to serve at a party and packs a punch!

1 pound pineapple gelatin mix
2 1/3 cups boiling water OR fruit juice
2 1/3 cups well-chilled coconut rum (see Notes, below)

~ In a large bowl or pitcher, stir together gelatin mix and boiling water until gelatin has dissolved.
~ Stir in chilled rum.
~ Pour mixture into 2 oz. plastic cups or wax-lined paper bathroom cups (Dixie cups).
~ Place cups on a baking pan for easy transport.
~ Chill until set, about 1 hour.

Notes: Chill bottle in the freezer for 1 hour before preparing shots. Traditionally, pina colada jello shots would need the flavor of coconut rum, but you can make them with any liquor.
