Recipe: Sweet Heat Jalapeno Cornbread
When we started out selling our gourmet mixes at the Market, this was one of
our best-sellers.
1/2 cup melted butter OR margarine
3/4 cup granulated sugar OR demerara sugar
2 eggs
1 cup cornmeal
1 cup all-purpose flour
1 cup water
1/4 cup buttermilk
powder
2 Tbls. dried
granulated
jalapenos
2 tsp. baking powder
1/2 tsp. salt
~ In a large bowl, whisk together butter and sugar. Beat in eggs.
~ Stir in remaining ingredients just until mixed.
~ Pour the batter into a greased 9" round cake pan.
~ Bake in a preheated 375 degree oven for 30 - 35 minutes, until a toothpick
inserted in the center comes out clean.
