Recipe: Creamy Kale, Cannellini & Carrot Soup
Simple soup is packed with protein and plant power!
2 tsp. olive oil OR butter
1 small onion, peeled, chopped
2 ribs celery, ends trimmed, chopped
4 cups vegetable broth OR ham broth OR chicken broth
3 medium carrots, peeled, cut into 1/4" thick slices
1/2 cup dried kale flakes
1 tsp. Italian seasoning blend
1 tsp. garlic pepper seasoning
8 oz. cream cheese (low-fat and fat-free varieties work great, too!)
15 oz. can Cannellini beans, drained and rinsed
salt, to taste
~ Heat a 2-quart saucepan over medium heat. Add oil, onion, and celery; cook, stirring often, until onions are translucent.
~ Add broth, carrots, kale, and seasonings to the pan; simmer just until carrots are tender.
~ Add cream cheese to pan and slowly whisk to melt and then incorporate into the broth.
~ Reduce heat to low, add beans to soup, and heat only until beans are hot.
~ Season with salt to taste.
Notes: I like to add cubed ham to this soup at the same time as the beans.

Flavor-packed creamy dip is spiced just right and littered with kale flakes. Go ahead, dip in! It's good for you!
16 oz. (2 cups) plain yogurt OR sour cream (low-fat okay)
2 Tbls. dried kale flakes
4 tsp. Mrs. No Salt seasoning
1 1/2 tsp.granulated onion OR onion powder
1/2 tsp.granulated garlic OR garlic powder
1/2 tsp. dried dill weed AND/OR dried cilantro leaves
1/2 tsp. ground black pepper
~ Stir together all ingredients and spoon into a sealable bowl.
~ Chill for at least 4 hours before serving with potato chips, veggies sticks, toasted pita, or pretzels.
Notes: In the event you'd like to add salt, start with 1/2 tsp., taste, and add more if desired.
