4 bone-in, skin-on chicken thighs
1 Lb. baby potatoes, washed and halved
2 Tbls. olive oil
1/4 cup Rockin' Rib Rub
~ In a zip-top bag OR sealable bowl, toss chicken and potatoes with olive oil and seasoning.
~ Spread mixture evenly onto a sheet pan and make sure chicken pieces are skin-side up.
~ Roast in a 425 degree oven for 40–45 minutes, until chicken is cooked through and potatoes are tender.
